TILAPIA WITH TOMATO BASIL
2 LBS. TILAPIA FILLETS
1/2 TSP SALT
1/8 TSP BLACK PEPPER
1/4 C. WHITE WINE
2 C. CHERRY TOMATOS
1/4 C. PITTED KALAMATA OLIVES
1/2 C. PARSLEY CHOPPED
1/2 C.BASIL CHOPPED
1 TBSP. VIRGIN OLIVE OIL
PREHEAT OVEN TO 425 DEGREES AND COAT BAKING SHEET WITH SPRAY.
PLACE FISH ON BAKING SHEET AND SEASON WITH S & P.
SPRINKLE WITH WINE AND BAKE 10 MINUTES.
MAKE TOPPING:
COMBINE TOMATOES, OLIVES, PARSLEY, BASIL AND OLIVE OIL IN BOWL.
SERVE TOPPING OVER FISH.
