Red Snapper

FISH
2 LB. GCLEANED WHOLE RED SNAPPER
1 TABLS. OLIVE OIL
1/2 TEASP. KOSHER SALT
1/2 TEASP. GROUND BLACK PEPPER
2 LEMONS SLICED THIN
2 GARLIC CLOVES, SLICED THIN
SAUCE
1/3 C. FRESH ORANGE JUICE
2 TABSP.  WATER
1 1/2 TABLS. FISH SAUCE
1 TEASP GRATED GINGER
1 TEASP. GRATED GARLIC
1/2 TEASP. MINCED SEEDED SERRANO CHILE
1/2 TEASP. HOT CHILI SAUCE
1 /2 TEASP. HONEY
1 DRIED HOT RED CHILE, SEEDED AND CRUSHED
Prepare grill to medium heat.

SAUCE:  
Combine first 10 ingredients, set aside

FISH:  
Score each fish with diagonal cuts on both sides.
Brush each side with olive oil. Sprinkle with salt and pepper.
Stuff lemon and garlic slices into cuts.
Coat outside of fish with cooking spray.   
Place fish on grill rack for 40 min. do not turn.     
Serve with sauce.
