1 1/2 TSP SUGAR
1 TSP. TARRAGON CHOPPED
1/4 TSP. SALT
1/8 TSP. GROUND BLACK PEPPER
FISH:
2 LBS. GROUPER OR FIRM WHITE FISH FILLETS
1 TBSP. OLIVE OIL
1/2 TSP. SALT
1/8 TSP. GROUND BLACK PEPPER
COOKING SPRAY
TO PREPARE RELISH MIX FIRST 12 INGREDIENTS, TOSSING WELL TO COAT.
TO PREPARE FISH, BRUSH FISH WTIH 1 TBSP. OIL, SPRINKLE EVENLY WITH 1/2 TSP. SALT AND 1/8 TSP. PEPPER.
HEAT SKILLET OVER MEDIUM HEAT, COAT PAN WITH SPRAY.
ADD FISH TO PAN, COOK 4 MINUTES ON EACH SIDE UNTIL FISH FLAKES, SERVE WITH RELISH.
